Kimchi Deviled Eggs

Oh yesss, the kimchi obsession continues… I have never really been a fan of devilled eggs, but this one is an absolute winner.

THE RECIPE

MAKES 8 EGGS

Ingredients

  • 8 eggs

  • 1 tsp mustard

  • 2 tbsp kewpie mayo

  • 1 tsp gochujang (optional)

  • 2 tbsp kimchi, chopped finely

  • 2 tbsp kimchi liquid

  • A drizzle of sesame oil

  • Black pepper to taste

Garnish

  • Oregano

  • Sesame seeds

  • Fried onions

  • Kimchi, chopped finely

Directions

  1. Drop the eggs in a pot of boiling water for 12 mins

  2. Once cooked, place the eggs in a bowl of ice water to chill

  3. Peel and halve the eggs, and scoop out the yolks into a medium sized bowl

  4. Into the bowl of yolks, add the kimchi liquid, chopped kimchi, kewpie mayo, mustard, gochujang, sesame oil and black pepper, and mix to combine

  5. Taste and adjust the seasoning to your preference

  6. Prepare a piping bag (or ziplock bag with a corner snipped), place a piping tip in (if you have one), and fill it with the kimchi-yolk mixture

  7. Carefully pipe the filling into the hollow portion of the egg whites

  8. Garnish with finely chopped kimchi, your favourite herbs, toasted sesame seeds, and some fried onions
