Zingy Asian Slaw
Got leftover rotisserie chicken or even some turkey lying around? Whip up this really easy and quick salad for a dish that’s packed with flavour and full of ziiing!
THE RECIPE
SERVES 3-4
Ingredients
½ roasted chicken
3 carrots, shredded
~100g salad leaves (if you have napa cabbage, it works well too)
~200g purple cabbage
1 capsicum, sliced
A handful of cilantro, roughly torn
Dressing:
2 tbsp light soy sauce
2 tbsp rice wine vinegar (or apple cider vinegar)
3 tbsp lime juice
1 tbsp sesame oil
3 tbsp olive oil
½ tsp sugar
1 tbsp sesame seeds
1 ½ tsp fresh ginger, grated
½ tsp black pepper
Garnish:
A handful of roasted almonds
A small handful of diced vintage cheddar
Directions
Combine all the salad ingredients in a large bowl.
Mix together the ingredients for the soy sesame dressing and dress the salad immediately before serving.
