Zingy Asian Slaw

Got leftover rotisserie chicken or even some turkey lying around? Whip up this really easy and quick salad for a dish that’s packed with flavour and full of ziiing!

THE RECIPE

SERVES 3-4

Ingredients

  • ½ roasted chicken

  • 3 carrots, shredded

  • ~100g salad leaves (if you have napa cabbage, it works well too)

  • ~200g purple cabbage

  • 1 capsicum, sliced

  • A handful of cilantro, roughly torn

Dressing:

  • 2 tbsp light soy sauce

  • 2 tbsp rice wine vinegar (or apple cider vinegar)

  • 3 tbsp lime juice

  • 1 tbsp sesame oil

  • 3 tbsp olive oil

  • ½ tsp sugar

  • 1 tbsp sesame seeds

  • 1 ½ tsp fresh ginger, grated

  • ½ tsp black pepper

Garnish:

  • A handful of roasted almonds

  • A small handful of diced vintage cheddar

Directions

  1. Combine all the salad ingredients in a large bowl.

  2. Mix together the ingredients for the soy sesame dressing and dress the salad immediately before serving.
