Veggie-Tofu Fritter

Do you have any (or a lot of..) vegetables in the fridge, and you just don’t know what to do with them?

Well, I gotchu! This recipe is a great way to use them up for a tasty dish! 🍽

I received a box of fresh produce earlier in the week and ended up with a heap of vegetables I still had to use up. I didn’t want them to go limp in the fridge so I decided to make a fritter out of everything (+ tofu!)

I’ll be real with you - I was completely winging this in the process and I know it probably doesn’t look like my best (realities of home-cooked food, am I right?). I wasn’t sure how exactly it would turn out…

... but alas, I pressed on and tweaked the recipe as I went along. And I’m glad I did because it really paid off! This turned out de-li-cious, and the seasoning was on point too - which is usually tough for large portions like this.

So, though the final result wasn’t the perfect fritter I was hoping for, I’m glad I embraced the mess and saw the whole thing through.. and now I’ve created a better guide for the next time I need to make this 😅

THE RECIPE

MAKES 18 FRITTERS

Ingredients

  • 1 corn on the cob, shucked

  • 250g zucchini/courgette, grated

  • 350g carrots, grated

  • 200g French beans, sliced finely

  • 450 firm tofu, drained and pressed dry

  • 1 red chilli, thinly sliced

  • 2 garlic cloves, grated

  • ½ yellow onion, thinly sliced

  • Herbs: basil, mint, parsley, thinly sliced

  • 4 tbsp flour

  • 5 eggs

  • 1 ½ tsp salt

  • ¼ tsp salt (for the zucchini/courgette)

  • 2 tsp pepper

  • 2 tbsp ground coriander

  • 1 tbsp ground turmeric

  • 3 tbsp smoked paprika

  • Oil for frying

Directions

  1. First, draw out the water from your grated zucchini. Place it in a colander over a bowl, sprinkle ¼ tsp over the zucchini and mix well. This will help draw out the water so your fritters don’t go soggy. After 10 minutes, squeeze all the water from the zucchini.

  2. In a large bowl, add all the vegetables, garlic, onion and herbs. Crumble the tofu into the bowl and mix well.

  3. Add in all the seasonings and flour, and mix well.

  4. Add in the eggs and mix till well combined.

  5. Heat up the oil in a shallow frying pan. Shape your fritters into your desired shape and place them into the hot oil. Fry for a few minutes on one side, then flip over to cook the other side till golden yellow.

  6. Serve on a bed of salad, or alongside some tzatziki and a squeeze of lemon juice. Enjoy!

Notes

  • Aside from the eggs, flour, tofu, the rest of the ingredients are flexible – you can use whatever you have in your fridge/pantry!
