“Ugly Apple” Jam
When life gives you wrinkly apples, you make apple jam!
Sometimes the apples in my fridge get wrinkly quicker than I can finish them. Most times I still eat them as they are, but if they get too soft I make apple jam with them! The type of apple doesn’t really matter, and it’s really simple to make.
These apples were sitting in my fridge for almost 2 weeks and they are still so good.
I love having my apple jam with peanut butter on toast, but my favourite part of all of this is probably the fragrance of the cinnamon simmering in the pot of chopped apples filling the entire house!
THE RECIPE
SERVES 50
Ingredients
4 wrinkly apples, cored and chopped
1 cinnamon stick
1 tbsp lemon juice
4-5 tbsp water, as needed
Directions
In a medium pot on low-medium heat, add the chopped apples, lemon juice and cinnamon stick. Cook gently and stir occasionally until apples have fully soften ~20min.
Once the apples are fragrant and softened (enough for a fork to pierce through easily), remove the pot from the heat and let it cool.
Once cool to touch, blend the mixture to your desired consistency. I like mine 80% smooth.
Notes
You may also use 2 tsp ground cinnamon in place of the cinnamon stick.
Store the jam in an air-tight container in the fridge. I like to use my jars for this!
Reduce even more waste by composting the core of the apples.
How to enjoy:
On toast - with your favourite nut butter
Stirred into yoghurt
Served with a cheese platter
To sweeten stews
