Spicy Mayo Chicken Sandwich

This is a meal you can make under 15 minutes!

Get yourself a rotisserie chicken from the supermarket; your future self will thank you. If you’re cooking for one, this chicken can even take you through several meals!

THE RECIPE

SERVES 1

Ingredients

  • ⅓ rotisserie chicken (100g)

  • 2 tsp crispy chilli

  • ½ tbsp Kewpie mayo

  • 2 slices of your favourite bread

  • 1 tsp mustard

  • ½ avocado

  • 3-4 pieces of butterhead lettuce

  • Black pepper

Directions

  1. Shred the chicken. Place ¼ of it in a bowl, and keep the rest aside.

  2. Mix the shredded chicken with crispy chilli and Kewpie mayo, and mix well.

  3. Lightly toast the bread, and spread mustard on one of it, and avocado on the other.

  4. Place the chicken over the avocado and season with black pepper.

  5. Lay the butterhead lettuce over, and close up the sandwich.

  6. Pack it up to take to work/school, or enjoy it on the spot!
