No-Bake Chocolate Cookies
The easiest no-bake cookies you need to make, especially for those of you who are still busy receiving open-house guests for Eid! 🥰
Think of the traditional cornflake cookie, but in a chewy-crunchy form, and much quicker to make. They’re also a source of protein and fibre, and tastes super chocolatey ✔️✔️✔️

THE RECIPE
SERVES 6 (SERVING SIZE: 5 MINI COOKIES)
Ingredients
170g oats (rolled/quick cooking)
60ml unsweetened plant-based milk (I used soy)
40ml coconut oil
60g honey
12g cocoa powder
100g crunchy peanut butter
¼ tsp vanilla essence
¼ tsp salt
¼ tsp cinnamon
Directions
Whisk all the ingredients except the oats until smooth
Stir in the oats and mix till combined
Scoop the batter onto a lined baking sheet in your preferred size for your cookie (I like using a mini ice cream scoop for this), flatten slightly, and chill in the freezer for 30 min
Store them in the fridge and serve chilled
