No-Bake Chocolate Cookies

The easiest no-bake cookies you need to make, especially for those of you who are still busy receiving open-house guests for Eid! 🥰

Think of the traditional cornflake cookie, but in a chewy-crunchy form, and much quicker to make. They’re also a source of protein and fibre, and tastes super chocolatey ✔️✔️✔️

THE RECIPE

SERVES 6 (SERVING SIZE: 5 MINI COOKIES)

Ingredients

  • 170g oats (rolled/quick cooking)

  • 60ml unsweetened plant-based milk (I used soy)

  • 40ml coconut oil

  • 60g honey

  • 12g cocoa powder

  • 100g crunchy peanut butter

  • ¼ tsp vanilla essence

  • ¼ tsp salt

  • ¼ tsp cinnamon

Directions

  1. Whisk all the ingredients except the oats until smooth

  2. Stir in the oats and mix till combined

  3. Scoop the batter onto a lined baking sheet in your preferred size for your cookie (I like using a mini ice cream scoop for this), flatten slightly, and chill in the freezer for 30 min

  4. Store them in the fridge and serve chilled
