Simple & Refreshing Coleslaw
I love coleslaw, but I have conditions.
I’m picky like that.
I like my coleslaw light, crunchy, and not drenched in mayonnaise. This is my go-to recipe with a simple dressing that gives enough flavour, while maintaining a refreshing finish.
This was served as part of a Latino-themed dinner party I hosted in my home, where I created a couple of dishes as part of a Taco Bar.

It can however be served as a side dish, or a salad base to accompany your favourite protein!
THE RECIPE
SERVES 6-8
Ingredients
350-400g (about ½ a head) of purple cabbage, shredded
2 medium carrots, shredded
Dressing
3 tbsp white wine vinegar
½ tbsp dijon mustard
½ tbsp Kewpie mayo
2 tbsp extra virgin olive oil
Salt and pepper
½ tsp celery seeds (optional)
Directions
In a large salad bowl, mix together the ingredients for the dressing.
Add in the cabbage and carrots, and toss it all together.
