Cheesy Spinach Palmiers

You really can’t go wrong with these palmiers! Sweet or savoury, they work just the same. If you want it MEGA EASY, use pesto for savoury, and a hazelnut spread for sweet 😏

I used cottage cheese for mine to get a little more protein in, but if you don’t have that, you can use cream cheese instead.

THE RECIPE

MAKES 12

Ingredients

  • 1 sheet puff pastry

  • 270g frozen spinach

  • 140g cottage cheese

  • 50g cheddar cheese

  • 40g sour cream

  • 6 slices jalapeño, chopped finely

  • 1 tsp Dijon mustard (optional)

  • ¼ tsp ground coriander

  • 2-3 stalks dill

  • 1 egg, beaten

  • Salt, pepper

Directions

  1. Preheat the oven to 180°C

  2. Wilt the spinach, either over the stove, in a microwave, or at room temperature

  3. Once wilted, squeeze out any liquid and chop up the spinach

  4. In a large bowl, add the spinach, ground coriander, salt and pepper

  5. Add the cottage cheese, cheddar cheese, sour cream, mustard, dill, and jalapeño

  6. Mix well and spread it across the puff pastry

  7. Roll each end of the pastry towards the middle, forming two mini pinwheels on each end

  8. If the pastry has warmed up slightly, chill it in the fridge for 8-10min before baking

  9. Brush the beaten egg over the pastry, and bake for 15-20mins, or until they get golden brown

Note

  • Your dough has to stay chilled as much as possible. So take it out only when you’re ready to use it, and pop it into the fridge for a couple of mins before baking if your kitchen is on the warmer side.
