Sweet Potato Patties
Not sure what to do with leftover sweet potatoes (and you’re not a fan of mash)? Make this! An easy recipe for using up leftovers in the fridge.
This dish was born out of some baked sweet potatoes that I had leftover from a meal. I don’t like letting food go to waste so I turned them into something different, but way better!
I really think some of the best dishes come from leftovers, and these sweet potato patties are the perfect example of that 😉
I was just being creative here but these turned out so well that I can definitely see myself making it again - with proper instructions next time!
I’ve written them down for you below and added some tweaks that I think could make it even better.
So if you find yourself with leftover potatoes and want something new, try this recipe!
THE RECIPE
MAKES ~8 SMALL PATTIES
Ingredients
~ 160g cooked sweet potato
3 tbsp milk (optional; leave out if you’ll be cooking on the pan)
1 egg
40g grated parmesan
35g frozen peas
2 tbsp flat leaf parsley, chopped
1 chlili, sliced
1 tsp smoked paprika
Salt and pepper for seasoning
½ tbsp oil for cooking
Lemon juice for garnish
Directions
In a large bowl, mash the sweet potato till smooth.
If you’ll be air frying the patties, add in the milk and incorporate it well into the mixture.
Then, add the egg, parmesan, frozen peas and chilli. Mix well. I also like to smash some of the peas to get different textures throughout the patty.
Season with paprika, salt and pepper.
Form them into small patties about the size of your palm.
If air frying: place them into the air fryer and spray some oil to coat. Bake at 180ºC for 5 minutes, then flip them and continue baking for another 3 minutes, or till lightly crisp.
If cooking on the pan: pan fry them on an oiled pan over medium heat, till a light crust forms on each side. This should take about 3-4 minutes.
