Addictive Miso Brussels Sprouts

I’ve been making this recipe for the past 4 Christmases, and the requests continue to come in each year.

The miso-infused dressing is the secret ingredient that makes it irresistibly moreish – a perfect blend of salty, sweet, and acidic notes. It's the ideal palate cleanser, lightening up the table amidst the heartier dishes.

THE RECIPE

SERVES 3-4

Ingredients

  • 650g Brussels sprouts, trimmed and halved (quartered if they’re large)

  • 2 tbsp olive oil

  • A pinch of salt

Sauce:

  • 1 levelled tbsp brown sugar

  • 1 tbsp mustard

  • ½ tbsp miso paste

  • 3 tbsp red wine vinegar

  • 1 garlic clove, grated

  • 2 tbsp water

  • Mix and shake it up

Garnish:

  • 1 tbsp grated parmesan cheese

  • 1 tsp red pepper flakes

  • Orange/lemon zest (optional)

  • A wedge of lemon

Directions

  1. Mix the ingredients for the sauce in a small bowl, and set it aside.

  2. Toss the Brussels sprouts in some oil and salt to get them evenly coated.

  3. Place them cut-side down onto a cold pan and put the lid on. Do not overcrowd them. If your pan is not large enough, cook them this way in batches. Cook over medium-high heat for about 4 minutes.

  4. Remove the lid and stir them about. You want them to be lightly browned at this point. If they’re starting to char, sprinkle some water and lower the heat.

  5. Reduce the heat to medium, and sauté for ~2 minutes.

  6. Turn the heat down low, and add the sauce mixture. Mix till everything is well coated.

  7. Once it’s ready, serve with a sprinkling of parmesan cheese, orange/lemon zest, red pepper flakes, and a wedge of lemon.
