Granolotte

I may be a little late to the air-fryer game… But gosh, do I LOVE it!

I find it incredible how things cook much faster in the concentrated space. The best part is - there’s no preheating involved!

It’s such a game changer in the kitchen, especially if you’re cooking for 1-2 people.

Here, I present to you: the OG recipe for Granolotte. You can hear more of the story behind my brand of granola here.

This granola is sweet, slightly salty, crunchy, and one of my favourite things in the world!

THE RECIPE

SERVES 12

Ingredients

  • 160g oats

  • 20g oil

  • 2g cinnamon

  • 0.5g table salt

  • 60g honey

  • 2g vanilla extract

  • 10g packed light brown sugar

  • 30g almond flakes

  • 30g whole almonds

  • 30g pumpkin seeds

  • 30g desiccated coconut

  • 60g dried cranberries

Directions

  1. Liquid: in a small bowl, whisk the oil, honey, and vanilla extract till well combined.

  2. Dry: in a large bowl, toss the oats, cinnamon, salt, sugar, seeds, desiccated coconut and both types of almonds.

  3. Pour the liquid over the dry ingredients and combine well.

  4. Line the basket of your air fryer with parchment paper.

  5. Cook at 170˚C for 5 minutes, stopping every 5 minutes to give it a good stir. In my air fryer, my total cook time was 15min, however you may have to see what works best in your machine. The granola is done when the mixture is golden brown.

  6. Remove it from the air fryer and spread it over a tray to cool and crisp up.

  7. Once cooled, stir in the cranberries and store in an air-tight container.

Notes

  • When measuring liquids, measure the oil before the honey. This will lubricate the measuring spoon, allowing the oil to glide out smoothly without any residual honey sticking to it!
