Festive Mixed Berry Compote

THE RECIPE

SERVES 2 SMALL JARS

Ingredients

  • 300g frozen strawberries

  • 100g frozen blueberries

  • 2 tbsp orange juice

  • 2 strips orange peel

  • 1 cinnamon stick

  • 2 star anise

  • 5-6 cloves

  • 1 tbsp Manuka honey

Directions

  1. In a small to medium sized pot, add the strawberries, orange juice, orange peel, and a sachet containing all the spices. Heat over low-medium heat till boiling.

  2. Once it boils, turn it down to a low simmer and cook till the berries break down slightly.

  3. Mash the mixture to your desired chunkiness. If you want it really smooth, you can blend it.

  4. Remove from the heat and cool it down.

  5. Once cool, stir in the Manuka honey till well incorporated.
