Date & Nut Energy Balls

These date and nut energy balls have become my new favourite snack for an afternoon pick-me-up!

You only need 6 simple ingredients and they’re soo easy to make.

If you’re living in Singapore, you can get the dates at The Source Bulk Foods or Mustafa! I like the former as you can buy just the amount you need (I’m a fan of the Medjool dates there!)

Try out different variations with pumpkin seeds, cranberries, dried apricots, dried figs, ginger powder, etc and let me know how you go : )

THE RECIPE

SERVES 2-4 (11 BALLS)

Ingredients

  • 5 large Medjool dates, pitted

  • 1 tbsp (12g) almond meal

  • 1 tbsp (6g) cocoa powder

  • 1 tbsp (6g) coconut flakes

  • 1 tbsp (44g) nut butter

  • Pinch of salt

Directions

  1. In a processor, blend all ingredients together until smooth. If it’s not coming together, add 1 tbsp water, or as needed.

  2. Dampen hands and shape them into balls. You can use a mini ice cream scoop to help with portioning.

  3. Chill in the fridge, or store in the freezer for a longer shelf life.

Notes

  • If you can’t take nuts or don’t have any almond flour at home, you may use oat flour. Grind up rolled oats in a food processor till it’s finely ground.
