Rice Salad with Fresh Herbs and Orange Dressing

 

The Recipe serves 2

Ingredients

3 cups uncooked rice

⅓ cups roasted almonds

¼ cups pumpkin seeds

½ cups pomegranate seeds

Zest of 1 orange

1 large chilli, sliced

½ small red onion, sliced

¾ cups fresh herbs (mint, basil, coriander, etc)

Dressing

6 tbsp extra virgin olive oil

4 tbsp apple cider vinegar

2 tbsp orange juice

3 tsp honey

2 garlic, minced

¼ tsp cinnamon

½ tsp ground cumin

½ tsp ground coriander

Pepper

Salt

Directions

  1. Put the rice to cook
  2. In a small bowl, whisk together the ingredients for the dressing. Set aside
  3. When the rice is done, fluff it up with a fork and, while it’s still hot, add orange zest and mix to combine. You can make it till this point and keep aside if you’re not serving it right away. Otherwise, continue by mixing in the dressing and topping it with pomegranate seeds, almonds, red onion, herbs, and chilli. Season with salt and pepper, and serve!
